1. Slow Cooker Pepperoni and Chicken – 211 Calories

Ingredients:

  • 1/4 cup black olives, sliced
  • 3/4 cup reduced-sodium chicken broth
  • 1 Tbsp tomato paste
  • 1 tsp dried Italian seasoning
  • 3/4 cup shredded, part-skim mozzarella cheese
  • 2 lbs boneless, skinless chicken breasts
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 3/4 oz turkey pepperoni (about 40 slices), sliced in half

Instructions:

Place chicken in a slow cooker and sprinkle it with salt and pepper. Cut pepperoni slices in half and add pepperoni and olives to cooker. Whisk together chicken broth, tomato paste and Italian seasoning, in a small bowl. Later pour mixture in cooker. Cover and cook on high-heat setting for 3 to 3 1/2 hours or on low-heat setting for 6 to 7 hours.

Sprinkle cheese on top of chicken, 5 minutes before you serve. Cover with lid and allow cheese to melt. Transfer chicken, pepperoni and olives to plates, using a slotted spoon and discard cooking liquid.

2. Skinny Cheeseburger Pie – 242 Calories

Serving size: 1 slice

Prep time: 15 minutes

Cook time: 40 minutes

Ingredients:

  • 2 Tbsp Worcestershire sauce
  • 1 cup low-fat cottage cheese
  • 1 egg
  • 1/4 tsp pepper
  • 3/4 cup reduced-fat, shredded cheddar cheese
  • 4 slices of tomato
  • 1 lb lean ground turkey
  • 1/2 cup onion, chopped
  • 1 Tbsp garlic, minced
  • 1 package reduced-fat crescent rolls

Instructions:

Preheat oven to 350 degrees and brown turkey, onion, and garlic in a large frying pan on medium heat. Mix Worcestershire sauce in with meat mixture and drain meat of fat/grease (if any). Reduce the heat to low.

Using a nonstick cooking spray, spray a 9 1/2 inch pie pan and take the crescent rolls and place them in the pan like puzzle pieces to form the bottom and the crust. Pinch the seems together and place the pan with just the dough in the oven and bake for 8 minutes.

Mix cottage cheese with egg in a small bowl.  Spoon the meat mixture into the pie pan after 8 minutes.  Pour the cottage cheese mixture over the meat and top with shredded cheddar cheese. Place tomato slices on top and bake for an additional 27-35 minutes. Wait 5 minutes before serving and enjoy.
